Tips on Making Stock
I am just as guilty as the next for buying a can of chicken or beef broth, or base you add water to, but the healthiest choice is to make your own. Healthy does not always equal easy as we all know. What mom has the time to stand in the kitchen for hour while children are about? (I have one in a baby wrap as I type this). Here are some tips to help speed the process and have your own healthy stock on hand for future use
As you are cooking dinner have a large freezer bag on hand. As you chop an onion for tonight’s meal throw the ends in the bag. This goes for any vegetable about to go bad in the fridge that you might also like in a stock.
Buy chickens whole rather than just the breasts or thighs and freeze in the same bag your necks, head and feet are good for stock. (this is a money saver as well)
Once you have enough scrap frozen to make the broth make as much as you can and let it cool.
Fill up ice cube trays with the stock as well as portion sized containers and freeze. All you need to do now is put an ice cube in a pan for a cooking liquid or use the container pop in a pot and soup is on its way!
