Broccoli Soup


I love soup and hate vegetables on their last day of life hiding out in the back of my fridge taunting me for buying too much.  Well not today broccoli!  Here is an easy but amazing broccoli soup from our kitchen to you.  Enjoy! 

4 cloves of garlic thin sliced

1 pound of broccoli with stems chopped

1 small yellow onion chopped

3 thick slices of bacon (we like La quercia)

1 1/4 quarts of Chicken stock

4 tablespoons butter

4 tablespoons of flour

Cream or whole milk to taste

Render the bacon in a large soup pot for about 5-8 min on medium heat then remove bacon leave the fat in the pot. 

 Add garlic to pot and toast it until golden brown.  Stir continuously.  Slicing the garlic helps to ensure it cooks evenly.  (A wooden spoon is best for this).  Once garlic is golden stir in the chopped onion, broccoli and half a tablespoon of salt and pepper to taste Add 4 tablespoons of flour stir (it will seem very dry).  Stir cont. 3-4 min (it can burn easy)

 

Add chicken stock and bring to boil than lower to simmer uncovered for 10 min.  Using a hand mixer or blender purée the soup to desired texture.

Finish by adding cream or milk, salt and pepper to taste.  Pour in bowls and top off with the bacon and serve with grilled cheese (we like tomatoes on our grilled cheese) serves 8-9
